Recipe: Here’s the secret to our Taiwanese Chilli Chicken Noodles

Ingredients for our Taiwanese Chilli Chicken Noodles

Peanut noodle salad
  • 180g noodles of your choice
  • 20g sesame oil
  • Pinch of salt
  • 15g peanut butter (smooth)
  • 20g lime juice
  • 55g roughly chopped carrots
  • 5g chopped coriander
Nam Jim sauce
  • 110g sweet chilli sauce
  • 15g soy sauce
  • 25g sesame oil
  • 10g water
  • 1 garlic clove finely chopped
  • 13g white vinegar

Garnish

  • Spring onion slices
  • Chilli slices
  • Chopped coriander
 

Salt and pepper floured chicken

  • 10g gluten free flour
  • 10g chickpea/ gram flour
  • pinch salt
  • pinch pepper
  • 2x eggs beaten
  • 4x chicken breasts
Taiwanese chilli glaze
    • 5g sesame oil
    • 35g sweet chilli sauce
    • 1 garlic clove chopped
    • 5g sriracha
    • 10g soya sauce
    • 1 tsp paprika
    • 1tsp cornflour
    • Pinch of salt
  • Broccoli 

    • 250g broccoli
  • Instructions for our Taiwanese Chilli Chicken Noodles

    Preheat the oven to 220 degrees Celsius/ 200 fan/ gas mark 6

    1. Line a baking tray with foil (shiny side down) and place to the side.

    2. Prepare the Taiwanese chilli by combining all the ingredients into a bowl and mixing well, set aside.

    3. Prepare the Nam Jim sauce by combining all of the ingredients into a bowl and set aside.

    4. To make the salt and pepper flour, combine all of the ingredients, besides the egg, in a large, flat bowl.

    5. Crack and beat two eggs into a separate bowl.

    6. Dip the chicken breast into the egg mixture until coated then into the salt and pepper flour mixture until coated well.

    7. Place the chicken onto the baking tray. Place the tray into the oven for 20-25 minutes or until cooked through.

    8. Cook the noodles according to the instructions on the packet.

    9. While the noodles are cooking, combine the remaining ingredients, apart from the carrots and coriander, into a large bowl. Once the noodles are cooked and drained, toss them into the peanut sauce until coated well. Mix in the carrots and coriander.

    10. Steam the broccoli for 5-7 minutes until soft. Feel free to toss with some olive oil or sesame oil and a pinch of salt once cooked.

    11. Once the chicken is cooked, using the back of a spoon or pastry brush, glaze the chicken in the Taiwanese chilli glaze. Feel free to slice the chicken into thin slices to serve.

    12. To serve, spoon the noodles into a serving bowl then top with the glazed chicken and broccoli. Pour over some Nam jim sauce and garnish with spring onion, chilli and coriander. Enjoy!
