Recipe: Here’s the secret to our vegan Meatless Stuffed Peppers dish

Lions Prep’s delicious protein-packed Meatless Stuffed Peppers with Roast Potatoes is a simple recipe that uses quality plant-based ingredients.

Tasty and bursting with flavour, this easy recipe works as a nutritious lunch or filling plant-based dinner, that everyone will love. Look out for this dish on our menu, or have a go at making them yourself. It’s absolutely delicious, as well as incredibly healthy. 

Ingredients for our Meatless Stuffed Peppers dish

    • 1 large yellow pepper  
    • 1 large red pepper 
    • 150g meatless mince  
    • 15g tomato paste  
    • ½ tsp Dried oregano  
    • ½ tsp dried rosemary  
    • 1 tsp paprika 
    • ¼ tsp dried chilli flakes  

     

    • ½ tsp dried basil  
    • 50g onions 
    • 1 small garlic clove  
    • 1 large carrot 
    • 5g brown sugar  
    • Salt and pepper to taste
    • 160g chopped tomatoes 
    • Olive oil 

    Instructions for our Meatless Stuffed Peppers

    Preheat the oven to 200 degrees Celsius. 

    1. Cut the peppers in half vertically, cutting straight through the core. Using a spoon, scoop out any seeds and membranes.  
    2. Place the peppers, lying down on a baking tray and evenly drizzle with olive oil, salt and pepper. Place the peppers to one side while you prepare the meatless mince mixture.  
    3. Dice the carrots, onions and garlic finely.  
    4. Add a small drizzle of olive oil into a frying pan then add the onions and carrots, fry for 5-6 minutes until soft. Add the garlic and fry for 2-3 minutes.  
    5. Add the vegan mince and all ingredients and spices besides the tomato paste and chopped tomatoes. Cook the mince according to the instructions on the back of the pack (or for 10 minutes, adding some water if too dry).  
    6. Add the tomato paste and mix through the mince.  
    7. Add the chopped tomatoes and simmer for 8-10 minutes until the sauce coats the mince.  
    8. Stuff the peppers with the mince, filling to the top.  
    9. Place in the oven for 20 minutes.  
    10. Serve with roast potatoes and enjoy!
